About the event

For this month’s Meatless Monday, we’re doing something a little different to celebrate Earth Day. I’ve designed a four-course "Rainbow Menu" that honors the incredible colors and flavors provided by our planet.


🌈 The Rainbow Earth Day Menu

The Red Start · Rooted in Red

Inspired by the classic Greek Pantzarosalata, this opening course showcases earthy roasted beets layered over tangy, garlic-infused vegan yogurt and finished with toasted walnuts. A grounding beginning that honors the mineral richness of the Earth.


The Orange Glow · Bright Sky

A silky, sun-kissed carrot soup captures the gentle warmth of early spring. Smooth, vibrant, and comforting, this bowl reflects the return of light and longer days.


The Golden Field · Field & Forest

Roasted cauliflower steaks take center stage atop creamy, golden polenta, finished with a bold, emerald-green chimichurri. This dish celebrates April’s lush growth, where cultivated fields meet wild greenery.


The Midnight Finale · Midnight Bloom

We close in twilight hues with a refined black and blue berry mousse. Deep, botanical, and lightly sweet, it’s an elegant finale to our journey through the colors of the Earth.
